Maltitol crystals, which are in rectangular parallelepiped shape and in which the ratio of length on width is 1.8-5.3, preferably 2.3-3.7, is claimed. Independent claims are included for: (1) a crystalline maltitol composition, comprising the crystalline fraction of the maltitol having at least 50, preferably 95-100 wt.% of rectangular parallelepiped crystals； and (2) the preparation of the maltitol crystals comprising crystallizing a maltitol syrup in water in the presence of impurities constituted of aldehydes and condensed dicarbonyl compounds.
