PROBLEM TO BE SOLVED: To provide a method for efficiently producing a Japanese refined Sake enzyme-treated product useful for food, cosmetics, etc. and high in storage stability.

SOLUTION: The method for producing the Japanese refined Sake enzyme-treated product is provided, including removing ethanol from Japanese refined Sake followed by conducting a treatment with a glucose oxidase. In the treatment, the ethanol concentration of the resultant Japanese Sake concentrate is lower than 1 mass%, and the content of &alpha-ethyl glucoside is 0.3 mass% or higher. After conducting the above treatment, the method also includes a treatment of removing gluconic acid transformed from the glucose.
