The present invention relates to a device for disposing a carcass of livestock. The device comprises: an input hopper receiving an animal carcass input thereto； a livestock carcass transport conveyor configured to transport the animal carcass input to the input hopper to the next process； a crushing sorting device provided to cut and sort the animal carcass transported by the livestock carcass transport conveyor to make the animal carcass into a mushy state and transport the same through a crushed matter transport conveyor, wherein a liquid by-product generated in the cutting and crushing process is absorbed into a fermenting agent to be separately transported； a fermenting agent discharge device transferring the fermenting agent, into which the liquid by-product is absorbed, to at least one of the crushing sorting device and a high heat sterilizer； the high heat sterilizer receiving the animal carcass mush, heating and sterilizing the input animal carcass mush by an induction heating device for heating a lower part of a main body and a microwave heating device for directly heating the animal carcass mush and then, discharging the sterilized animal carcass mush； a deodorizer discharging water vapor and gas generated and discharged from the high heat sterilizer to the outside after the odor is removed； a discharge hopper receiving the sterilized animal carcass mush discharged from the high heat sterilizer； a discharge part transport conveyor discharging the animal carcass mush input into the discharge hopper to the outside； a deodorant injector injecting a deodorant to the odor generating site； and an air dome installed to enclose all the devices.
