The present invention relates to a method to prepare an immature tomato hydrolysate containing 0.5% or more of tomatidine, which can be utilized as a main cosmetic ingredient or a marker substance, and to a cosmetic composition containing the same. More specifically, the method of preparing an immature tomato hydrolysate containing 0.5% or more of tomatidine, according to the present invention, comprises the following steps: extracting tomatine from immature tomatoes； disintegrating the extract using volatile organic acid； and removing the volatile acid therefrom. The cosmetic composition of the present invention comprises 0.001-30.0 wt% of an immature tomato hydrolysate, more preferably 0.01-5 wt% of the immature tomato hydrolysate containing 0.5% or more of tomatidine. The cosmetic composition has excellent effects of removing active oxygen species, reducing fine wrinkles on the skin, increasing skin elasticity, and preventing aging.본 발명은 미숙 토마토로부터 화장품 주성분 및 지표성분으로 활용 가능한 토마티딘을 0.5% 이상 함유하는 미숙 토마토 분해물을 제조하는 방법과 이를 유효성분으로 함유하는 화장료 조성물에 관한 것으로서, 좀 더 구체적으로는 미숙 토마토로부터 토마틴을 추출하는 공정, 이를 휘발성 유기산을 이용하여 분해하는 공정 및 휘발성 산을 제거하는 공정으로 이루어진 토마티딘을 0.5% 이상 함유하는 미숙 토마토 분해물을 제조하는 방법 및 토마티딘을 0.5% 이상 함유하는 미숙 토마토 분해물을 유효성분으로 0.001 ~ 30.0중량%, 바람직하게는 0.01 ~ 5중량%를 함유하는 것을 특징으로 하며 활성산소 소거효과, 피부 잔주름 개선효과, 피부 탄력 개선효과, 노화방지 효과가 우수한 화장료 조성물에 관한 것이다.
