The present invention relates to frozen confection such as water-ice, fruit ice and ice cream etc..Frozen confection such as water-ice, fruit ice, ice cream etc. are welcome by consumer.But, the special nature of these products is that they are considered as flavor than thin.Therefore, the present invention provides frozen confection, and it is included:(a) 0.001 6%w/w, preferably 0.01 2%w/w, most preferably 0.1 2%w/w melting temperature are 40 DEG C to 20 DEG C, preferably 40 DEG C to 10 DEG C of edible oil;(b) 0.01 2.0%w/w, preferably 0.1 1%w/w string;(c) 1 30%w/w, preferably 2 25%w/w freezing point depressant;(d) 0.001 5%w/w, preferably 0.001 2%w/w, most preferably 0.001 0.5%w/w one or more flavor enhancements;And wherein described frozen confection has 5 200%, preferably 5 100%, most preferably 5 50% expansion rate;The preparation of wherein described frozen confection includes homogenization step;Wherein described string includes:At least 50%w/w, preferably at least 70%w/w cellulose and hemicellulose;5 30%w/w, preferably 5 20%w/w pectin;And the lignin less than 5%w/w;The water binding ability of wherein described string is more than 800 weight % before homogenization step, and is more than 1000 weight %, preferably greater than 2000 weight %, more preferably greater than 3000 weight % after homogenization step.Buluş buzlu şerbetler, buzlu meyveli şerbetler, sorbeler vb. dondurulmuş şekerli ürünlerle ilgilidir.
