The present invention relatesto compositions of matter comprising a ricegrain, which has been at least partially milled,and, on the surface of the rice grain, a coatingcomprising bran, a material which increasesthe fiber value of the composition, or acombination thereof. The present inventionprovides for compositions that may have thebenefits of traditional white rice, i.e., softmouth feel, short cook times, easy to digest,white appearance, long shelf-life, etc., withthe benefits of brown rice, i.e., high nutritionalvalue and enhanced flavor. Indeed, thenutritional value of the compositions of thepresent invention may be equal to or betterthan that of whole grain brown rice. Thepresent invention further relates to methodsfor the preparation of a whole grain ricecomposition. In one embodiment the methodscomprises at least partially milling rice grains,and coating on the surface of the rice grains,a coating comprising bran, a material whichincreases the fiber value of the composition, ora combination thereof.
