PROBLEM TO BE SOLVED: To provide a device and method for monitoring a dried state of material to be dried for a frozen drying machine capable of monitoring a dried state of material to be dried during a secondary drying step without using any temperature sensor and completely eliminating a dangerous state of collapsing of the material to be dried.SOLUTION: Control means PLC stores control programs for a dry warehouse DC, a cold trap CT and degree of vacuum adjusting means, a required calculation program and some required formulae. When material to be dried enters a secondary drying period, the control means PLC changes a dry warehouse degree of vacuum Pdc as it is, and calculates an average product temperature Tm and an average dehumidifying speed Qm of the material to be dried at the secondary drying period in reference to measured data including the dry warehouse degree of vacuum Pdc across the change, a cold trap degree of vacuum Pct and a rack temperature Th detected by rack temperature detecting means.
