The present invention relates to an automatic stir-frying machine, which comprises a main machine body, a base, a stir-frying roller, burner heads, an overturning mechanism, a holding trench, a washing mechanism, a kitchen waste draining device and a control unit. The base is fitted on the center of the main machine body, and the stir-frying roller for holding food is provided on the base and can be driven to revolve by power. At least one burner head are fitted on the lower of the stir-frying roller for heating the food inside the roller. The overturning mechanism is set on the main machine body to turn over the base as concurrently as to pour out the food inside the roller to the holding trench under the main machine body. Then the washing mechanism is used to clean the roller by water spraying and air blowing to let food leavings fall into kitchen waste draining device. Moreover, the aforesaid actions can be controlled by a control unit on the main machine body.
