The present invention relates to a sprout ginseng processing method wherein not only roots of sprout ginseng, but also stems and leaves thereof are concentrated to be shipped without the stems and leaves going to waste. The sprout ginseng processing method comprises: a step in which roots and leaves (including stems) of sprout ginseng are freeze-dried separately a step in which the freeze-dried roots and leaves (including stems) of sprout ginseng are each extracted for a first time by adding 40-80% ethanol thereto, and are filtered by using a filter a step in which the roots and leaves (including stems) of hydroponic ginseng, extracted for the first time, are extracted for a second time under the same conditions as the first extraction by adding 50% ethanol thereto a step in which the roots and leaves (including stems) of hydroponic ginseng extracted for the second time are extracted for a third time by adding 100% water thereto a step in which extracts of roots and leaves (including stems) of hydroponic ginseng formed by the first, second and third extractions are mixed for each part a step in which the mixed extracts of each part are each concentrated for a first time in a water bath by using a rotary evaporator and a step in which the concentrates concentrated for the first time are each concentrated in a water bath for a second time by using a rotary evaporator to produce final concentrates to be collected.
