The present invention also relates to a process for the production of alkali metal bicarbonate particles by spray-drying an aqueous solution or suspension comprising from 1% to 10% by weight of an alkali metal bicarbonate and a resinous acid or fatty acid as an additive. The present invention is further directed to a method for preparing alkali metal bicarbonate particles by covalently bonding an alkali metal bicarbonate in the presence of a resin acid as an additive.
