A method for making a center-filled confection, and a product comprising thecenter-filledconfection. The confection is made by preparing confectionery shell material,preparing acenter-fill composition which is capable of forming a pumpable liquid whenheated, heating thecenter-fill composition to a temperature sufficient to convert it into apumpable liquid, andholding it at a temperature sufficient to maintain it in a liquid state,coextruding the confectioneryshell material and the center-fill composition as a liquid filled rope,forming the filled rope intoindividual confectionery pieces, and allowing the confectionery pieces to coolto less than 26°Cto form a confectionery piece. After a period of time, the center-fillingundergoes a phasechange to become a fine crystalline filling.
