PROBLEM TO BE SOLVED: To provide a noodle-making roller mill compacting noodle dough, forming a noodle strip, and further rolling the formed noodle strip and, preventing a workers hand fingers from coming into contact with rotating mill rollers.SOLUTION: A flaky noodle dough raw material 90 is made to pass through a noodle dough passage 32a provided between a safety cover 60 (a protective member) and a noodle dough insertion part 32, poured into a rolling part 26 of a pair of mill rollers 20 installed horizontally, sent to the rolling part 26 of the pair of mill rollers 20 to form a noodle strip 92, and taken up around a take-up rod 50a placed on take-up arms 42 and 43 (taken-up positions). Further, the noodle strip 92 taken up by the taken-up rod 50a and transferred to taken-up rod placement bases 44, 45, 46, and 47 (sending-out positions) is made to pass through noodle strip passages 62a provided at the safety cover 60 and sent to the rolling part 26 of the pair of mill rollers 20 to be rolled into a prescribed thickness.
