PROBLEM TO BE SOLVED: To provide a manufacturing installation and manufacturing method which can manufacture black garlic, black onions or black shallots with flavor effectively.SOLUTION: A manufacturing installation manufactures black garlic, black onions or black shallots by maturing garlic, onions or shallots in a maturational chamber. The maturational chamber 10 is provided with piping 23 that high temperature fluid flows through to inside of partition parts 13, 14, 15 and 16 partitioning off the inside and outside of the chamber.
