PROBLEM TO BE SOLVED: To provide a method, and an apparatus by which efficient automation is performed using an IC tag in retort sterilization to enhance security of the sterilization and even re-sterilization can efficiently be carried out when the sterilization is not suitably carried out.SOLUTION: The method for controlling retort sterilization, and the control apparatus thereof are composed so that: the retort sterilization temperature and heating time measured at a preset time interval are recorded on a recording medium 7 on a real-time system from the time when the retort sterilization temperature exceeds a prescribed temperature after starting the retort sterilization the fatality rate at the time interval is computed from sterilization environmental information composed of the retort sterilization temperature and the heating time recorded on the recording medium 7 after completing the sterilization the fatality rate and the heating time are integrated to compute an actually measured F value as the sum total and whether or not the retort sterilization is suitable can be decided, and the degree of sterilization effects can be obtained according to whether or not the actually measured F value is kept within the range of the upper and the lower limits of the predetermined target F value.COPYRIGHT: (C)2010,JPO&INPIT【課題】レトルト殺菌において、ICタグを用いて効率的な自動化をし、殺菌の確実性を高め殺菌が適切に行われなかった時の再殺菌も効率的に行えるようにした方法および装置を提供する。【解決手段】レトルト殺菌を開始した後、レトルト殺菌温度が一定温度を超えた時から、予め設定した間隔時間毎に計測したレトルト殺菌温度と加熱時間とを記録媒体7にリアルタイムに記録し、殺菌終了後、前記記録媒体7に記録されたレトルト殺菌温度と加熱時間とからなる殺菌環境情報から、前記間隔時間毎の致死率を算出するとともに、その致死率と加熱時間を積算して総和として実測F値を算出し、その実測F値が予め定めた目標F値の上下限値の範囲内に入っているか否かによってレトルト殺菌処理の適否の判別と殺菌効果の程度を把握できる構成にする。【選択図】図1
