A partially frozen confection making apparatus (1) is disclosed. A hollow thermally conductive cylinder (2) has a refrigeration apparatus (25, 26) to cool the exterior of the cylinder. A rotor (6) is mounted co-axially within the cylinder and includes a plurality of radially extending blades (7) rotatable with the rotor. Each of the blades has a longitudinally extending edge (9) which is provided with castellations (10). The castellated blade edges are closely spaced from the interior of the cylinder. A motor (12) is connected to the rotor to rotate same. The cylinder has an exit (14) at one, lower, end a screw mechanism (13) to advance loose material within the cylinder towards the exit. Adjacent the other, upper, end of the cylinder is an inlet (16) for syrup. A syrup having a water base, a flavouring, vegetable gelatine and no animal protein is also disclosed. A method of using the apparatus to make at least partially frozen confections is also disclosed.
