The present invention relates to a ginseng seed composition for inhibiting absorption of glucose and a method for producing the same. Particularly, the present invention relates to the ginseng seed composition which includes ginseng seed oil, extracted from ginseng seeds, and thus has an effect of inhibiting absorption of glucose. More particularly, the present invention provides: the ginseng seed composition, which has &alpha；-glucosidase more excellent inhibitory activity and &alpha；-amylase inhibitory activity based on ultrasonic extraction using hexane according to an extraction method of the present invention, as compared to extrusion and supercritical extraction； health functional food or a therapeutic and pharmaceutical composition for preventing or treating diabetes； and a method for producing the same.본 발명은 당 흡수 저해용 인삼 씨 조성물 및 이것의 제조방법에 대한 것으로, 특히 인삼의 씨로부터 추출된 인삼씨유를 포함하여 당 흡수 저해 효과를 갖는 인삼 씨 조성물에 대한 것이며, 더욱 상세하게는 상기 추출 방법으로서 헥산을 이용한 초음파 추출에 의하는 경우 압출이나 초임계 추출보다 더욱 우수한 α-Glucosidase 저해활성 및 α-Amylase 저해활성을 갖는 인삼 씨 조성물, 건강기능성 식품, 또는 당뇨병 예방 또는 치료용 약학 조성물 및 이것의 제조방법을 제공하기 위한 것이다.
