PROBLEM TO BE SOLVED: To provide a mixture food or a blended food which is excellent in food mass-forming properties while having hardness allowing an eater to easily mash with her (his) tongue, has slightly adhesive properties and also smooth surface to be easy to drink, has reheating-resistance and slight change in palate feeling or solid state caused by temperature change, and is suitable for food for persons with difficulty in digestion or swallowing even though reheated when eaten: and to provide a solidification adjuvant for persons with difficulty in digestion or swallowing having favorable flowability when stirred with a mixer, a blender or the like, preventing loss of nutrients and functional components inherent in food, and also enabling preparation of the mixture food or the blended food having uniform palate feeling.SOLUTION: The solidification adjuvant for persons with difficulty in digestion or swallowing is produced by using a solidification adjuvant containing 0.01-1 pt.mass of deacylation-type Gellan Gum based on 1 pt.mass of native Gellan Gum so as to be usable for a mixture food or a blended food.COPYRIGHT: (C)2010,JPO&INPIT【課題】舌で容易に潰せる程の硬さでありながらも食塊形成性が良く、付着性も小さく、更には表面が滑らかで飲み込みやすいミキサー食又はブレンダー食を提供する。また、再加温耐性を有し、温度変化によって食感や物性の変化が小さく、喫食時に再加温しても咀嚼・嚥下困難者用食品として適した食感や物性を有するミキサー食又はブレンダー食を提供する。更に、ミキサーやブレンダー等での攪拌時に良好な流動性を有し、食品本来の栄養、機能成分の損失を防止でき、かつ均一な食感を有するミキサー食又はブレンダー食を調製できる咀嚼・嚥下困難者用固形化補助剤を提供する。【解決手段】ミキサー食又はブレンダー食に適応可能な咀嚼・嚥下困難者用固形化補助剤として、ネイティブ型ジェランガム1質量部に対し、0.01~1質量部の脱アシル型ジェランガムを含有する固形化補助剤を使用する。【選択図】なし
