The extruded noodle having a through hole (2), said through hole extending along the longitudinal direction, wherein: the hole (2) is closed or reduced in size in the step of boiling or reconstituting in hot water the noodle； in the cross section of the noodle (1), the hole (2) radially extends outward from the center of the cross section of the noodle (1)； and, in the hole, a plurality of grooves (22) are formed rotational symmetrically about the center of the cross section.Para obtener fideos extruidos que tienen un corto tiempo de cocción o buenas características de reconstitución y se puedan comer sin ninguna sensación extraña en la boca, la presente invención proporciona un fideo extruido que tiene un orificio (2) que se extiende a través del mismo en una dirección longitudinal, en donde: el orificio (2) se cierra o se contrae durante la cocción o rehidratación en agua caliente； y el orificio (2) en una sección transversal del fideo (1) está configurado de forma tal que una pluralidad de ranuras (22) se forman rotacionalmente simétricamente alrededor de un centro de la sección transversal, extendiéndose en una dirección radial exterior desde el centro de la sección transversal del fideo (1).
