PURPOSE: An apparatus for punching curd and a method of manufacturing tofu using the same are provided to increase the binding force and hardness of tofu regardless of the composition of bean curd dregs. CONSTITUTION: A curd punching apparatus(100) comprises a driving part(20) which moves back and forth by installed in a base frame(10), and a punching part(30) which is connected to the driving part and forms a plurality of channels on the curd. The base frame comprises a pair of side frames(11) and an upper frame(12) interlinking the upper end of the side frame. The driving part includes a piston rod(22) which is moving by air pressure or hydraulic pressure in a cylinder(21). The upper part of the piston rod is connected in the movable plate(23). The punching apparatus comprises a connection rod(31) which is connected to the lower surface of the movable plate, a punching plate(32) installed in the lower part of a rod, and plural punching needles(33) arranged in the lower surface of the punching plate. A bearing(13) is installed between the upper frame and the connection rod to reduce friction force. The punching needle is made of heat processed stainless steel. The diameter of the punching needle forms into 0.1 mm to 5 mm.
