PROBLEM TO BE SOLVED: To provide a beverage capable of suppressing remarkably occurrence of layer separation or precipitation during sterilization or under long-time preservation, even when a salt as a pH adjustment agent is not used during production, and having excellent flavor rise of a milk component or a plant component.SOLUTION: Carrageenan having a μ-component and a &ngr;-component is used as a stabilizer for a beverage.【課題】製造時にpH調整剤としての塩を使用しない場合であっても、殺菌時及び長期保存下での層分離や沈殿の発生が顕著に抑制され、乳成分や植物成分の香り立ちが良好な飲料を提供する。【解決手段】飲料の安定剤として、μ成分及びν成分を有するカラギナンを用いる。【選択図】なし
