PROBLEM TO BE SOLVED: To develop a technique capable of simple and mass production of human sphingolipid and plasmalogen-type glycerophospholipid and thereby develop functional food materials containing them.SOLUTION: Fowl skin is heat-treated for degreasing and then extracted with a solvent to obtain a complex lipid fraction containing human sphingomyelin and plasmalogen-type phosphatidyl ethanolamine. The lipid components are isolated from the complex lipid fraction. The complex lipid fraction is treated with a weak alkali to obtain a sphingolipid mainly composed of human sphingomyelin.
