PROBLEM TO BE SOLVED: To provide a method for producing the raw material of a vegetable belonging to the genus Allium and containing cycloalliin in a high concentration.
SOLUTION: This raw material 3 of the vegetable belonging to the genus Allium, containing &ge0.5 wt.% cycloalliin based on its dried material is produced through an alkali treating process P1 of adjusting the vegetables 1 belonging to the genus Allium such as heat-treated or not heat-treated welsh onion, onion or the like in advance so as to become pH &ge7 and pH &le12, and a heat-treating process P2 of heat-treating the obtained alkali-treated material 2. In the alkali-treating process P1, a basic amino acid or a volatile alkali is used. As the vegetables 1 belonging to the genus Allium, the vegetables not performed with crushing treatment before the alkali-treating process P1 are used. In the heat-treating process P2, the heating condition is set at &ge65°C and &ge1 min.
