PROBLEM TO BE SOLVED: To produce a compact frozen noodle cake in which the hollows of noodle lines are reduced, and texture is homogeneous.SOLUTION: Cooked noodle lines are charged to a tray for freezing, a ctenidium is rotated to the charged noodle cake to produce a noodle cake in which the directionality of the noodle lines is controlled and the parts in which the noodle lines are intermingled are eliminated as possible so as to be leveled, the produced noodle cake is pressed, the pressed noodle cake is frozen, and a frozen needle cake is produced to obtain a compact frozen noodle cake in which the hollows of the noodle lines caused by pressing are reduced, and texture is homogeneous.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】本発明は、本発明は、コンパクトで、麺線の凹みが少なく、食感が均質な冷凍麺塊を製造することを課題とする。【解決手段】加熱調理された麺線を冷凍用トレーに充填し、充填した麺塊に対して櫛歯を回転させることにより麺線の方向性を整えて麺線が交錯する部分を極力なく均した麺塊を作製し、作製した麺塊を押圧し、押圧した麺塊を冷凍して冷凍麺塊を作製することで、コンパクトで、押圧による麺線の凹みが少なく、食感が均質な冷凍麺塊を製造できる。【選択図】図1
