The present invention addresses the problem of providing a fractional extraction method whereby mucin and collagen are separately and fractionally extracted from a single starting material that comprises jellyfish. The method for fractionally extracting mucin and collagen is characterized by comprising: a protein separation process (A) for crushing jellyfish, solid-liquid separating the thus obtained water-containing crushed product, mixing the thus obtained liquid component with a water-soluble alcohol having 1 to 4 carbon atoms, said mixing being conducted in such a manner as to control the concentration of the water-soluble alcohol having 1 to 4 carbon atoms to at least 50 vol% relative to the whole mixture, and then solid-liquid separating the thus obtained mixture to give solid matters; and a fractionation process (B) for mixing the solid matters that are obtained in the above protein separation process (A) with an aqueous solution of a water-soluble alcohol having 1 to 4 carbon atoms, said aqueous solution having an alcohol concentration of 10-40 mass%, and then subjecting the thus obtained mixture to solid-liquid separation to thereby solid-liquid fractionate the mixture into a mucin-containing liquid component and a collagen-containing solid component.本發明之目的在於提供一種以水母為一種原料,由水母有效地分別萃取出黏蛋白及膠原蛋白之黏蛋白及膠原蛋白的分別萃取方法,包括將水母破碎形成含水破碎物,經固液分離獲得液體成分,液體成分與碳數1-4的水溶性醇類混合,使碳數1-4之水溶性醇類的濃度至少佔整體的50體積%,混合所獲得的混合物經固液分離獲得固體成分之蛋白質分離步驟(A),以及將上述蛋白質分離步驟(A)所獲得的固體成分與10-40質量%之碳數1-4的水溶性醇類水溶液混合,接著,經固液分離劃分成含黏蛋白的液體成分與含膠原蛋白的固體成分的劃分步驟(B)。
