PROBLEM TO BE SOLVED: To provide a method for surely cutting off a head-form vegetable such as cabbage, Chinese cabbage or lettuce without damaging it at a target point between its galeas and head, and to provide a cutter to be used for the method.SOLUTION: The cutter comprises a wire material 11 of a predetermined length, a supporting column 12 functioning to move the wire material 11 relatively to a vegetable, and guides 16 and 17 arranged in between the wire material 11 and the supporting column 12 wherein the outer diameters of the guides 16 and 17 are each greater than that of the wire material 11.
