The present invention relates to a method for increasing the stability and coating efficiency of probiotics using ultrasound, and a food composition containing the probiotics lyophilized powder manufactured by the method as an active ingredient. The ultrasonic treatment is performed at the step after completing the cultivation of the probiotics or after mixing with the coating, thereby enhancing the stability of the probiotics and the coating efficiency. The survival rate at low or high temperature of the powder of the probiotics at step of the lyophilization and after the lyophilization is enhanced, and the survival rate in the digestive tracts is increased to increase the intestine reaching rate in vivo, thereby exhibiting the functionality as probiotics.본 발명은 초음파를 이용한 프로바이오틱스의 안정성과 코팅효율을 증가시키는 방법 및 그 방법으로 제조된 프로바이오틱스 동결건조분말을 유효성분으로 함유하는 식품조성물에 관한 것으로서, 프로바이오틱스 배양이 완료된 후의 단계에서나 코팅제와 혼합한 후의 단계에서 초음파를 처리하여 프로바이오틱스의 안정성 및 코팅 효율을 높임으로써 동결건조 단계 및 동결건조 후 프로바이오틱스의 분말의 저온 혹은 고온에서의 생존율을 향상시키고, 소화관 생존율을 높여 인체 내 장도달율을 높여 프로바이오틱스로서의 기능성을 나타낼 수 있는 장점이 있다.
