PROBLEM TO BE SOLVED: To provide a drying device that can optimally carry out drying of potatoes such as sweet potatoes, vegetables such as pumpkins and carrots, fruits such as grapes and persimmons, and, furthermore, drying of squids and fish, and especially a structure of a dry room in which racks provided with trays on which each food materials is placed can be accommodated.SOLUTION: A compactly designed dry room includes a plurality of trays on which a food material, which is a food to be dried, is placed, racks for accommodating the trays vertically in parallel, and side plates provided on both sides of the rack, which include a plurality of openings through which drying air used for drying the food material, which is a food to be dried, placed on the trays passes. The drying air is caused to pass through a narrow space divided by the upper and lower trays by using a duct structure and a pressure fan； the food material, which is a food to be dried, is dried； an indoor moisture is discharged by switching a valve in the duct； and outer air is sucked.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2020,JPO&INPIT【課題】 本発明はさつま芋等の芋類、カボチャや人参等の野菜類、ブドウや柿等の果実類の乾燥、更にはイカや魚の乾燥を最適に行う乾燥装置に関し、特に上記各食材を載置するトレーを備えたラックが収納可能な乾燥室の構造に関する。【解決手段】 乾燥対象食品である食材を載置する複数のトレーと、該トレーを上下に並列に収納するラックと、該ラックの両側に設けられ、前記トレー上に載置された乾燥対象食品である食材の乾燥に供した乾燥風が通過する複数の開口が設けられた側板と、を備えた乾燥室であり、ダクト構造と圧力ファンを使用することにより、前記上下のトレーによって分割された狭い空間に乾燥風を通し、乾燥対象食品である食材の乾燥を行ない、ダクト内の弁の切換によって室内の湿気を排気し、外気の吸入を行ない、コンパクトに設計されたことを特徴とする。【選択図】 図１
