The composition comprises soap derived from the saponification of a natural carotenoid-containing oleoresin, wherein the soap contains non-esterified xanthophyll particles and oleoresin components from the original natural carotenoid-containing oleoresin, and 90% of the non-esterified xanthophyll particles are 0.5 microns diameter, and the composition comprises at least 75mg of non-esterified xanthophyll per gram soap. The process comprises (a) alkaline saponification of a natural carotenoid-containing oleoresin in the presence of a metal hydroxide, heat (110-180C) with intimate mixing, (b) isomerisation of the non-esterified carotenoids in the resulting soap to produce a final product that has a non-esterified carotenoid concentration of the greater than 10%, wherein the soap is heated to obtain 80% of the non-esterified carotenoids present are in the all-trans isomer, and (c) contacting the final product with water to create an aqueous product (0.5 - 10%). 75
