The present invention relates to a method and an apparatus for freezing fish or processed fish items in trays. The invention provides a system where the items are frozen in plate freezers and in an automated manner providing packings for universal storing and transport systems. The apparatus comprises: a plurality of trays for the holding and transferring food items to be frozen tray, a plate freezer for vertical freezing the food items in the trays, a device for transferring the trays into the plate freezer, a device for transferring the trays out of the plate freeze, a device for transferring the trays to a packing station, a device for gripping and turning/rotating the tray for ejecting the content from the tray at a packing station, wherein the tray holds the food items through the process of freezing and packing in a fully automated process.L'invention concerne un procédé et un appareil de congélation de poisson et de préparation d'articles de poisson en plateau. L'invention concerne également un système dans lequel les articles sont congelés dans des congélateurs à plaques et qui, de manière automatisée, fournit des emballages pour des systèmes de stockage et de transport universels. L'appareil comprend : une pluralité de plateaux pour le maintien et le transfert d'articles alimentaires à congeler, un congélateur à plaques pour congeler verticalement les articles alimentaires dans les plateaux, un dispositif de transfert des plateaux dans le congélateur à plaques, un dispositif de transfert des plateaux hors de la plaque de congélation, un dispositif pour transférer les plateaux à une station d'emballage, un dispositif pour saisir et tourner/faire tourner le plateau pour éjecter le contenu du plateau au niveau d'une station d'emballage, le plateau maintenant les articles alimentaires par le biais du processus de congélation et d'emballage dans un processus entièrement automatisé.
