PROBLEM TO BE SOLVED: To provide a method for preventing a fish-paste product from becoming overheated and swelling when there is no other choice of applying overheat to the fish-paste product.SOLUTION: A method for suppressing overheat of a fish-paste product includes soaking a coating of an oil cooked food with water in the case of heating in a microwave oven the oil cooked food made by applying coating to a fish-paste product followed by cooking it in oil. The amount of water to be soaked in the coating is preferably 8-20 wt.% of the weight of the oil cooked food, and the fish-paste product to be used is preferably a product which is added with dietary fiber of 0.5-10 wt.% of the weight of the fish-paste product.COPYRIGHT: (C)2013,JPO&INPIT【課題】練製品に過剰な加熱をかけざる得ないときに、練製品が過加熱となり、膨張するのを防ぐ方法を提供する。【解決手段】練製品に衣をつけて油ちょうした油ちょう食品を電子レンジで加熱する場合に、油ちょう食品の衣に水分を含ませておくことにより、練製品の過加熱を抑制する方法である。衣に含ませる水分量は油ちょう食品の重量の8~20重量%が好ましく、用いる練製品としては食物繊維を練製品の重量の0.5~10重量%添加したものが好ましい。【選択図】 図1
