PROBLEM TO BE SOLVED: To provide a method for producing dried persimmon, capable of producing orange-colored dried persimmons in a short time.SOLUTION: The method is characterized in comprising the following process: in a chamber 10 in which peeled persimmons 14 are held is kept at 35-50°C, a temperature higher than the outside air temperature, under reduced pressure of 500 mmHO in the maximum differential pressure relative to the atmospheric pressure during the practice, a drying step of evaporating moisture from the surface of the persimmons along with hydrolyzing the sucrose in the persimmons into invert sugar by enzyme invertase therein and a diffusion step of introducing the outside air into the chamber to restore the inside pressure of the chamber to the atmospheric pressure and concurrently diffusing the internal moisture of the persimmons onto the surface while cooling the chamber temperature to the outside temperature and keeping the condition are repeated alternately to effect drying the persimmons into the objective dried persimmons.
