594775 Disclosed herein is a process for the production of one or more phytosterols comprising the steps of: dispersing in a disperser at a temperature in the range of 140ºC to 250ºC one or more phytosterols, water and one or more sodium or potassium salt of a fatty acid, such as oleic acid, in the range of 10 mg to 200 mg of salt per gram of phytosterol to produce an aqueous emulsion of phytosterol or phytosterols, and cooling the emulsion to produce an aqueous dispersion of phytosterol or phytosterols； or comprising the steps of: dispersing in a disperser at a temperature in the range of 140ºC to 250ºC one or more phytosterols , water and one emulsifier in the range of 10 mg to 200 mg of emulsifier per gram of phytosterol to produce an aqueous emulsion of phytosterol or phytosterols, feeding the emulsion to heated homogenizer at the temperature in range of 140ºC to 250ºC to produce an homogenized emulsion, and cooling the emulsion to produce an aqueous dispersion of phytosterol or phytosterols.
