PROBLEM TO BE SOLVED: To provide noodles and coating each having excellent palate feeling, taste and flavor of durum wheat flour by improving the product quality of durum wheat flour.SOLUTION: Durum wheat flour is obtained by suppressing a damaged starch quantity to &le9.5 mass%. A noodle wheat flour composition contains &ge5 mass% of the wheat flour.
