A method of preparing fruit puree with high pressure is provided. The method comprises: grinding fruit to be homogeneous sludgy fruit puree and adding an enzyme to the homogeneous sludgy fruit puree to obtain a fruit puree mixture and the fruit puree mixture is treated by using 50-800 MPa pressure to obtain the fruit puree.
