Die Erfindung betrifft die Verwendung bestimmter Lignane sowie deren Salzen und Gemischen davon zur Veränderung bzw. Maskierung unangenehmer Geschmackseindrücke, insbesondere bitterer, adstringierender und/oder metallischer Geschmackseindrücke. Die Erfindung betrifft auch ein entsprechendes Verfahren zur Maskierung unangenehmer Geschmackseindrücke, insbesondere bitterer, adstringierender und/oder metallischer Geschmackseindrücke. Ferner betrifft die Erfindung bestimmte Zubereitungen, die einen wirksamen Gehalt an erfindungsgemäß einzusetzenden Lignanen, deren Salzen bzw. Gemischen davon, enthalten.Use of 1-3 enterodiol compounds comprising (2R,3S)-2,3-bis-(3-hydroxy-benzyl)-butane-1,4-diol (I), (2S,3R)-2,3-bis-(3-hydroxy-benzyl)-butane-1,4-diol (II) and (2R,3R)-2,3-bis-(3-hydroxy-benzyl)-butane-1,4-diol (III) and/or 1-3 salts of (I)-(III) for sensorially changing or masking unpleasant taste impression, preferably bitter-, astringent- and/or metallic taste impression of an unpleasant tasting substance, preferably a bitter substance, is claimed.
