The present invention relates to an apparatus for cutting garlic stems and roots. This apparatus includes: a body as a base having multiple frames a cutting member positioned in a central portion of the body an operation conveyor member mounted in a length direction of the body for continuous passage through the cutting member and a transport conveyor transporting stem- and root-cut garlic to a predetermined place from the operation conveyor member. The operation conveyor member has: multiple buckets accommodating a clove of garlic and a pair of chains where multiple mounting plates are mounted to support the multiple buckets from below. The pair of chains is driven by a sprocket mounted on the body on one side and a resinous roller mounted on the body on the other side.
