PROBLEM TO BE SOLVED: To provide a noodle line cutting-out device capable of cutting out square sharp noodle lines excellent in texture and taste.SOLUTION: A noodle line cutting-out device 1 has, in the parallel-arranged state, a first cutting blade roll 10 provided with a prescribed number of annular blades 11 at a constant interval in an axial length direction, and a second cutting blade roll 20 provided with a prescribed number of annular blades 21 at a constant interval in the axial length direction. Each shape of the annular blades 11, 21 is a hollowed arc shape having a horizontal part on both ends, and having arc-shaped trough parts 12, 22 in the axial length direction.
