PROBLEM TO BE SOLVED: To provide Lactobacillus plantarum LRCC5309 (Accession Number KCCM11781 P) strain isolated from raw milk with excellent low temperature resistance.SOLUTION: The invention relates to a novel lactobacillus strain excellent in low temperature resistance, i.e., Lactobacillus plantarum LRCC5309 (Accession Number KCCM11781 P), and to an ice cream produced with addition of the strain, where the strain is a low temperature resistant strain stably maintaining viability under extreme environmental conditions such as before and after freezing, repeated freezing and thawing, temperature fluctuation during freezing, with an excellent expression amount of cold shock protein, which strain is applicable to ice cream.SELECTED DRAWING: Figure 3COPYRIGHT: (C)2017,JPO&INPIT【課題】原乳から分離した低温抵抗性に優れたラクトバシラスプランタラム(Lactobacillus plantarum)LRCC5309(寄託番号KCCM11781P)菌株を提供する。【解決手段】本発明は低温抵抗性に優れた新規の乳酸菌であるラクトバシラスプランタラムLRCC5309(寄託番号KCCM11781P)菌株、及び前記菌株を添加して製造したアイスクリームに関するもので、前記菌株は、冷凍前後、冷凍と解凍の繰り返し、冷凍中の温度変化などの極限環境でも生育安定性を持ち、低温ショックタンパク質(cold shock protein)の発現量に優れた低温耐性菌株であり、アイスクリームに適用できる。【選択図】 図3
