The present invention relates to a water soluble composition containing ginseng seed oil, and more specifically, to a water soluble compositing containing ginseng seed oil which includes ginseng seed oil, lecithin or saponin, and distilled water. According to the present invention, the water soluble composition is homogenized into nanosize particles while using minimum amount of an emulsifier, so a homogenized and stable water soluble state is maintained for long time storage without causing precipitation, sediment or damage. Also, the water soluble composition has excellent heat resistance, acid resistance, and alkali resistance to have excellent stability, and has uniform nanosize particles to exhibit excellent adsorption rate and bioavailability, so the water soluble can be applied to various fields, such as a food composition including health function food, a cosmetic component, a feed composition, and a pharmaceutical composition.
