PROBLEM TO BE SOLVED: To provide a food product remaining a flavor such as taste and smell of pineapple fruit and having a peculiar texture of rapidly disintegrated in a mouth.SOLUTION: The porous food product with 0.1 g/cm3-0.4 g/cm3 of bulk specific gravity is obtained by having pineapple fruit containing fruit peel or pomace of the pineapple fruit as a raw material, scratching and crushing the raw material, and freezing and drying an object obtained by heating and hydrolyzing the object to be scratched and crushed.COPYRIGHT: (C)2013,JPO&INPIT【課題】パイナップル果実の味と香りなどの風味を残し、口中で速やかに崩壊する独特の食感を呈する食品を提供する。【解決手段】果皮を含むパイナップル果実、又はパイナップル果実の搾り粕を原料とし、この原料を摩細し、この摩細物を加熱し加水分解したものを凍結乾燥することによって得た、嵩比重0. 1g/cm3 ~0. 4g/cm3の多孔性の食品とした。【選択図】なし
