The present invention relates to an apparatus for manufacturing soy meat using a twin-screw extruder, capable of continuous manufacturing soy meat by gelatinization and puffing of mixed ingredients through simultaneously mixing, pressing and heating ingredients. To this end, the apparatus for manufacturing soy meat using the twin-screw extruder according to the present invention comprises: a supply unit for supplying ingredients； a mixing and extruding unit for mixing and extruding ingredients supplied from the supply unit for puffing； a driving unit for driving the mixing and extruding unit； a cutting unit for cutting the puffed ingredients continuously discharged from the mixing and extruding unit； a heating and cooling unit mounted at the outer surface of the mixing and extruding unit and heating and cooling the mixing and extruding unit； and a water supply unit for supplying water to the ingredients supplied to the mixing and extruding unit.본 발명은 재료의 혼합, 가압 및 가열이 동시에 수행되어 혼합재료를 호화 및 팽화시켜 식물성 콩고기를 연속으로 제조할 수 있는 이축 압출기를 이용한 식물성 콩고기 제조장치에 관한 것이다.상기의 과제를 해결하기 위하여 본 발명에 따른 이축 압출기를 이용한 식물성 콩고기 제조장치는 원료를 공급하는 공급부； 상기 공급부에서 공급되는 원료를 혼합하고 압출하여 팽화시키는 혼합 압출부； 상기 혼합 압출부를 구동시키는 구동부； 상기 혼합 압출부에서 연속적으로 배출되는 팽화된 원료를 절단하는 커팅부； 상기 혼합 압출부의 외측면에 설치되어 상기 혼합 압출부를 가열시키거나 냉각시키는 가열냉각부； 및 상기 혼합 압출부로 공급되는 원료에 물을 공급하는 물 공급부 를 포함하여 구성되되, 상기 혼합 압출부는 내부에 이축 스크루 수용공이 길이방향으로 구비되고, 일측은 폐쇄되며 타측은 개구된 구조로 이루어진 하우징； 상기 하우징의 폐쇄측 상부에 설치되어 상기 공급부에서 공급되는 원료를 상기 하우징의 내부로 안내하는 유입호퍼； 상기 하우징의 이축 스크루 수용공에 회전 가능하게 설치되고, 상기 구동부에서 인가된 동력에 의해 회전되는 한 쌍의 스플라인； 상기 스플라인 각각에 삽입되어 설치되고, 상기 유입호퍼를 통해 유입된 원료를 상기 하우징의 개구측으로 이송하면서 압출시키는 압출 스크루； 상기 하우징의 개방측에 설치되어 상기 하우징을 지지하는 하우징 지지판； 상기 하우징 지지 플레이트에 면접되어 설치되고, 다이 안착통공이 구비되는 압출 다이판； 및 상기 압출 다이판의 다이 안착통공에 설치되어 상기 압출 스크루에 의해 이송 압출된 원료를 팽화시켜 배출시키는 압출 다이를 포함하여 구성되는 것을 특징으로 한다.
