PROBLEM TO BE SOLVED: To provide an acidic emulsion seasoning which imparts a rich taste peculiar to a fermented milk.SOLUTION: An acidic emulsion seasoning having a fermented milk flavor composed of a mixture of fermented milk and edible oil, with a pH of 3 to 5, contains 0.01 to 0.4% of lactic acid, 0.2 to 0.6% in total of one or a plurality of adipic acid, fumaric acid, and succinic acid, and acetic acid, and also contains dimethyl pyrazine and furfural, having a viscosity of 0.5 to 50 Pa s (product temperature: 20°C).
