594138 Disclosed is a method for manufacturing a mixed solution comprising propionate and acetate, which comprises the steps of: a) providing a fermentation product comprising propionate, acetate, and carbonate-related compounds being carbonates, bicarbonates, and carbonic acids; and b) adding acid (such as lactic acid) to the fermentation product to obtain an acidified fermentation product comprising propionate and acetate with a pH in the range of 2.5 to below 8. Also disclosed is an aqueous solution obtained by the process as defined above, comprising lactate in an amount of 30-50 wt%, propionate in an amount of 0.5-7 wt%, and acetate in an amount of 0.5-7 wt%, for use as an additive or as a taste enhancer in food, meat (including uncured meat and poultry products) or drink products.
