PROBLEM TO BE SOLVED: To provide edible metal foil suitable as a decorative material for a water-containing food or beverage, and a method for manufacturing the same.SOLUTION: The edible metal foil for decoration, both sides of which are coated with a colorless or colored film, exhibits metal photoluminescence. The film is a water-insoluble transparent or translucent resin film formed by crosslinking edible resin. Shellac resin is preferable as the resin, and the resin film may contain edible coloring pigments. The edible metal foil for decoration can be manufactured by the method including: a step of applying an alcohol solution containing shellac resin to both sides of the edible metal foil and a step of forming a heat-curable resin film on either side of the metal foil by crosslinking the shellac resin by heating.COPYRIGHT: (C)2012,JPO&INPIT【課題】水分を含む食品や飲料の装飾用素材に適した、食用金属箔およびその製造方法を提供する。【解決手段】食用金属箔の両面を無色もしくは有色の皮膜で被覆してなる、金属光輝性を示す加飾用食用金属箔であって、前記皮膜が、食用可能な樹脂を架橋させることによって形成された、水不溶性の透明または半透明の樹脂皮膜であることを特徴とする。樹脂としては、シェラック樹脂が好ましく、樹脂皮膜は、食用可能な着色色素を含んでいてもよい。前記加飾用食用金属箔は、食用可能な金属箔の両面に、シェラック樹脂を含むアルコール溶液を塗布する工程、及び加熱により、前記シェラック樹脂を架橋させて、前記金属箔の両面に熱硬化性の樹脂皮膜を形成する工程を含む方法等によって製造することができる。【選択図】なし
