The invention relates to an aqueous caramelized carbohydrate composition comprising at least one common D-aldohexose, at least one common D-ketohexose, at least one rare hexose, especially psicose and/or allose, and at least one carboxylic acid. The invention also relates to the preparation of such an aqueous caramelized carbohydrate composition and to the isolation of the rare hexose from the aqueous caramelized carbohydrate composition.
