The present invention relates to a method for improving the storage stability of birch sap using ultrahigh pressure treatment, wherein microbial propagation is carried out by treating the birch sap filled in the sterilization vessel at a temperature of 5 to 10C and a pressure of 450 to 550 MPa for 30 to 120 seconds. It is possible to extend the quality life of the sap by 6 times as compared with the control group.본 발명은 초고압 처리를 이용한 자작나무 수액의 저장성 향상방법에 관한 것으로, 멸균용기에 충전된 자작나무 수액을 5 ~ 10℃ 온도에서 450 ~ 550MPa 압력으로 30 ~ 120초 동안 처리함으로써, 미생물 증식을 막고 그에 따른 수액의 이화학적 안정성을 확보하여 수액의 품질수명을 대조군에 비해 6배 연장시킬 수 있는 효과가 있다.
