The present invention relates to a fish drying kit capable of preventing fish from being spoiled by oxidative rancidity during a drying procedure, and improving a poor sanitary environment caused by oil dropping onto the ground. A middle side part and a floor background part of the drying kit are sealed to maintain an anaerobic dry condition, and a medium, providing heavier gas than air, is installed in the lower or middle part of the drying kit. A discharge line is installed in the floor background part, and thus, when fish is dried in the drying kit, the heavy gas of the medium prevents outdoor air from flowing into the drying kit and prevents oil of the fish from making contact with air, so nonacidified oil is able to be obtained. As such, the present invention is capable of significantly improving a poor sanitary condition caused by oil spreading all over the floor of the drying place during the drying procedure, as well as making excellent freshness and providing beneficial nutrients for humans by minimizing the oxidative rancidity of unsaturated fatty acid contained in the fish.본 발명은 덕장에서 어류를 건조시키는 과정 중 산화적 산패 (oxidative rancidity)에 의한 변질을 방지하고, 지면으로 낙하되는 기름으로부터 제공되는 불량한 위생 환경을 개선시킬 수 있는 어류 건조키트에 관한 것으로서, 본원은 무산소 분위기의 건조상태를 유지하기 위하여 건조키트의 중간측벽부 및 바닥바탕부는 밀폐구조이고 상부만 개방된 구조를 이루는 건조키트의 저부 또는 중간부위에는 공기보다 무거운 기체를 제공하는 매개체가 내장되는 구조를 이루고, 바닥바탕부에는 배출라인이 설치되는 구성을 이루어서 어류가 건조키트 내부에 내삽되어 건조될 때 건조과정 중 매개체의 무거운 기체로 인하여 외부공기가 건조키트 내부로 유입되지 않고 어류에서 배출되는 기름은 공기와의 접촉이 차단되어 산폐되지 않은 상태의 기름을 얻을 수 있는 기술로 종래의 어류 건조과정 중 덕장 바닥에 난잡하게 떨어지는 기름 오염에 의한 불량한 위생 상태를 크게 개선함은 물론 어류에 포함된 불포화지방산의 산화적 산패를 최소화하여 신선도가 우수하고, 인체에 유익한 영양소를 제공할 수 있는 어류 건조키트를 제공하는 기술이다.
