The present invention relates to soy sauce for cooking and a manufacturing method thereof, and more specifically, to soy sauce capable of flavoring the taste of seasoned fried chicken and freshness of Japanese apricot by inserting a Japanese apricot concentrate and sugar into soy sauce, mixing the mixture well through agitation, storing the mixture in a predetermined container to feel unique scent of Japanese apricot and aging the mixture for about ten days, and mixing aged Japanese apricot soy sauce with seasoned fried chicken sauce containing docosahexaenoic acid (DHA) well. According to the present invention, soy sauce capable of flavoring plentiful taste and nutrition is provided through a manufacturing method comprising: a step of inserting 20 to 30 parts by weight of a Japanese apricot concentrate and 10 to 15 parts by weight of sugar with respect to 100 parts by weight of soy sauce, and mixing the mixture well through agitation a step of aging the mixture (Japanese apricot soy sauce) at room temperature of 15 to 20C for ten days a step of adding 10 to 30 parts by weight of DHA to the aged Japanese apricot soy sauce a step of inserting 20 to 30 parts by weight of existing seasoned fried chicken sauce into the mixture to agitate the mixture with a cooking tool while boiling the mixture at a temperature of 100C in order to mix the mixture well and a step of cold-aging the mixture for 3 to 5 days.본 발명은 조리용 간장소스에 관한 것으로, 더욱 상세하게는 종래의 간장에 매실 농축액과 설탕을 넣고 잘 교반하여 혼합하고, 매실의 고유한 향을 느낄 수 있도록 일정한 용기에 보관하여 약 10일간 숙성한 뒤에 숙성된 매실 간장에 DHA가 함유된 양념치킨 소스를 잘 섞는 제조방법을 통해 양념치킨의 맛과 매실의 상큼함을 동시에 즐길 수 있는 간장소스에 관한 것이다. 본 발명에 따르면, 간장 100중량부에 대하여, 매실 농축액 20~30중량부, 설탕 10~15중량부를 넣고 잘 섞어 혼합시키고, 혼합물(매실간장소스)을 15~20℃의 실온에서 10일간 숙성시킨 후, 숙성된 매실간장소스에 DHA 10~30중량부를 첨가하고, 통상의 치킨용 양념소스 20~30중량부를 넣고 잘 배합될 수 있도록 100℃의 온도에서 10분간 끓이면서 조리도구를 이용하여 교반하고 3~5일 동안 냉장숙성시키는 제조공정을 통하여 더욱 풍부한 맛과 영양을 선보일 수 있는 간장소스를 제공한다.
