PROBLEM TO BE SOLVED: To provide a fold shape forming device that forms multiple folds on the top surface of food material dough on the upper parts of steamed buns and breads are substantially spherical.SOLUTION: A fold forming unit 97 includes an arm part 33A and a blade part 33C. The blade part 33C includes multiple fold forming plates 33 with blades 33D, 33F being cut into food materials 5, multiple support shafts 31 for mounting the fold forming plates 33 in a swinging manner, respectively, a support casing 129 for mounting the support shafts 31, and a lifting/lowering lot 35 slidably fitted inside the support casing 129 and engaged with the arm part 33A of the fold forming plate 33.
