PROBLEM TO BE SOLVED: To provide a flour milling method for barley and barley flour with a product yield and quality thereof significantly improved by removing a husk as much as possible while leaving a bran on each barley grain firstly, and then grinding and crushing the barley grain.SOLUTION: A flour milling method for barley by polishing the barley for milling comprises: removing husks from husked barley using a flow pressure generated when grains contacts each other and then grinding and crushing the barley grains similar to the milling process done to wheat and rye. In the step for removing the husk from the husked barley, an outer layer part corresponding to 8 to 12 wt% of the whole grain is removed while a bran is left to remain up to both ends of the grain in a longitudinal direction.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】大麦粒の内皮を残し、外皮を可能な限り除去する処理を行い、その後に挽砕処理を行うことによって、大麦粉の製品歩留まりと品質を大幅に向上させた大麦の製粉方法及び大麦粉を提供する。【解決手段】大麦を精麦して製粉する大麦の製粉方法において、穀粒と穀粒を接触による流動圧力を利用して玄麦の外皮を除去する工程を行った後に、小麦やライ麦の製粉工程と同じ様な挽砕処理を行う。玄麦の外皮を除去する工程では、穀粒の縦長方向の両端まで内皮を残し、穀粒全体の8~12重量%に相当する外層部を除去する。【選択図】なし
